Peanut Buttercup Flavored Brownies

Hi everyone! I felt a chocolate craving today so I decided to make some brownies. These brownies are delicious, moist and super chocolaty and peanut buttery. After three tries, I finally created the best recipe, not too cakey or soft, it is perfect. So if you want to give it a try take a look at the recipe. It is super simple and literally only takes 30 mins to finish, consisting of 10 mins of prep and 10-15 mins to bake. 

Ingredients:

1/4 cup of cocoa powder
1/8 cup of coconut oil/ butter
3/8 cup of peanut butter (preferably the chunky and unsweetened kind)
1/2 cup of flour
1/2 tsp of salt
1/2 tsp of baking powder
1 egg
1/2 cup of sugar
1 splash of vanilla

Preheat the oven to 350 degrees F. 
1.Mix the flour, salt and baking powder together in a bowl.
2. In a separate bowl, whisk the egg, vanilla and sugar together.
3. In another bowl melt the coconut oil/butter and mix well with the cocoa powder.
4. Pour the flour mixture and cocoa powder mixture into the bowl containing egg and sugar. 
5. Make sure everything is well incorporated and smooth. 
6. Bake for 10-15 mins and check up on it every 1 min or 2 after the 10 mins mark. 
7. Take it out and let it cool and serve.
8. Enjoy your chocolaty, peanut buttery goodness.

Makes 3 servings (unless you are me, then it would only be one serving)

Vegan Chocolaty Banana Caramel Bites

This snack was inspired by a video I had watched on YouTube on how to make vegan caramel, which is basically mashed dates. It is delicious and easy to make. All you need are a couple ingredients that you probably already have in the pantry.

Recipe:

1 banana

Chop up the banana into 1/4 in slices and freeze them until solid.

Caramel:
4 dates
1 tbsp hot water
1 1/2 tsp of honey

Pit the dates and chop them into smaller pieces. Place the dates, hot water and honey into a blender and blend until thick and smooth.

Chocolate coating:
1 1/2 tsp of real cocoa powder
1 tbsp coconut oil

Mix the cocoa powder and and coconut oil together and mix until smooth.

Assembling:

Take your frozen banana slices and smear some caramel on top of each one. Then use a spoon and pour over some of the chocolate coating and let this set in the freezer for 15-20 mins. I KNOW IT'S HARD TO WAIT BUT DO IT. If you don't, you will just have a gooey mess all over your fingers. Once the coating is set, enjoy your master piece Make sure to store these in the freezer if you don't finish them, which I highly doubt, because these are delicious!

Skor Bars

The first time I this ate this, it was heaven in my mouth. It is a combination of the sweet and sticky caramel filling, buttery sugar cookie base, and slight crunch of the skor bits on top. This is an amazing treat that your whole family will enjoy. 
Recipe:
Base:
3/4 cup butter
3/4 cup brown sugar
1 1/2 cups flour

Cream until well blended. Press evenly into a 13" by 9" cake pan. Bake 350 degrees for 20 - 25 mins or until light golden brown.
Filling:
1 - 300 ml can sweetened condensed milk
2 Tbsps butter

Heat, stirring constantly until thickened, aproximately 5 - 10 minutes. Spread over base. Bake 12 - 15 mins or until golden brown.

Topping:
1 - 300 gram pkg milk chocolate chipits : sprinkle over top and bake 2 mins more. Spread evenly
1 - 225 gram pkg skor toffee bits: sprinkle over top of chocolate. Press lightly into chocolate.

Cool completely then put in the freezer for 15-20mins to let it set. Store at room temperature and enjoy!
